Kimchi Beef Cauliflower Bowl

This kimchi beef cauliflower bowl is the kind of meal that works as hard as you do. It comes together in 40 minutes, uses one pan and one baking sheet, and delivers a powerful combination of protein, fibre, and probiotics in every bite. Why cauliflower instead of rice?

Cauliflower is a cruciferous vegetable with a unique benefit for hormonal health. It contains a compound called indole-3-carbinol. This compound supports the liver’s ability to break down and clear excess estrogen. Roasting cauliflower with Chinese five spice adds depth of flavor. It also makes this bowl naturally lower in carbohydrates than a traditional grain-based bowl.

Lean ground beef for protein and iron

Using 95% lean ground beef keeps saturated fat low without sacrificing protein. Beef is also one of the richest dietary sources of haem iron. Iron is essential for healthy menstrual cycles and energy production. Many women with hormonal imbalances are also low in iron, so including it regularly in meals matters. Garlic and ginger add anti-inflammatory support while the beef cooks.

Kimchi — the probiotic powerhouse

Kimchi is a fermented food rich in beneficial bacteria. A healthy gut microbiome plays a direct role in estrogen metabolism. When gut bacteria are out of balance, the body can reabsorb estrogen it should be clearing. Adding kimchi to your meals is a simple, flavorful way to support this process. Even just a few tablespoons per serving makes a meaningful difference.

Ginger and garlic for inflammation

Both ginger and garlic are well-studied anti-inflammatory ingredients. Chronic low-grade inflammation is one of the key drivers of hormonal disruption. Ginger specifically has been shown to support healthy cortisol levels. Garlic supports liver detoxification pathways. Together, they turn a simple weeknight dinner into a genuinely functional meal.

Kimchi Beef Cauliflower Bowl

Ingredients

  • 1 small cauliflower, florets
  • 1 tsp. Chinese five spice
  • 12 oz. (340g) 95% lean ground beef
  • 1 clove garlic, minced
  • ½ tsp. root ginger, minced
  • 6 tbsp. kimchi
  • 1 green onion, sliced

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with baking paper.
  2. Add the cauliflower, Chinese five spice, 1 tbsp. of olive oil, salt and pepper into a large bowl. Toss to combine, then spread over the prepared baking sheet. Roast the cauliflower in the oven for 20-25 minutes, or until browned.
  3. Meanwhile, heat 1 tbsp. of olive oil in a pan over medium heat. Add the ground beef, garlic and ginger, and season with salt and pepper. Cook the beef for 5-7 minutes, breaking it up as it cooks, until it is cooked through.
  4. Divide the cauliflower, beef and kimchi equally between 2 bowls and garnish with the sliced green onion. Serve immediately.

Notes

Meal prep and storage tips

This bowl is excellent for meal prep. Cook the beef and roast the cauliflower in advance. Store them separately in the fridge for up to four days. Add the kimchi fresh when serving to preserve the live cultures. This keeps the probiotic benefit intact and prevents the bowl from becoming soggy.
