Shrimp Brown Rice & Green Bean Bowl

- 1 cup (100g) dry brown rice
- 10oz (300g) shrimp, peeled and deveined
- 2 cups (225g) green beans, trimmed
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- ½ teaspoon paprika
- Salt and pepper to taste
Instructions
- Cook the brown rice according to the package instructions.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
- Add the shrimp to the skillet and cook for about 2-3 minutes on each side until cooked through. Remove from the skillet.
- In the same skillet, add the green beans and sauté for 5-6 minutes.
- In a bowl, whisk soy sauce, lemon juice, paprika, salt, and pepper.
- Return the shrimp to the skillet with the green beans and pour the sauce over the mixture. Stir well to coat everything evenly.
- Add the cooked brown rice to the skillet, stir, and cook for an additional 2-3 minutes.
