- 16 oz. (450g) low-fat cottage cheese
- 1 tbsp. tomato paste
- 1.3 oz. (37g) taco seasoning
- 1 tbsp. honey
- ½ tsp. chili flakes
- 1 tsp. ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment.
- Toss sweet potatoes with 1 tbsp olive oil, cinnamon, salt, and pepper. Spread on the sheet and roast for 18-20 minutes until tender and crisp.
- Meanwhile, heat the 1 tbsp olive oil in a pan over medium heat. Sear ground beef for 2-3 minutes until browned. Add taco seasoning and tomato paste. Cook for 2 more minutes, then stir in honey and chili flakes. Add a splash of water if needed.
- Assemble bowls with roasted sweet potatoes, beef, sliced avocado, and 4 oz (115g) cottage cheese per bowl.
- Sprinkle with additional chili flakes if desired. Serve.
